Bursting with banana and maple flavor, these energy balls are completely vegan! Delicious, fuss free, and a great use for those bananas with a few spots (they make these balls even more sweet)! Recipe (makes about 20 depending on size):
150g banana (about 2-3 bananas, choose the ones with those brown spots for lots of banana sweetness)
165g Rude Health 5 Grain 5 Seed Porridge (the crunchy seeds in the 5 Grain 5 Seed are absolutely perfection with the creamy bananas, regular oats also work)
45g maple syrup (or use honey if not vegan but the maple flavor really makes these balls explode with flavor!)
20g walnuts (15g in the balls, 5 set aside to top. If you don’t have walnuts, don’t sweat it, use almonds or whatever you have on hand)
Method: Mash the bananas with a fork or masher, until they are soft without lots of lumps. Grind the walnuts in a food processor or cut them into small pieces by hand. Add the Rude Health 5 Grain 5 Seed Porridge, the maple syrup and 15 grams of walnuts to your banana mash. The “dough” will be wet but the consistency should be that it will stay together when you roll a bit in-between your hands. If the “dough” is too dry, add additional banana mash. If it is too wet, add a bit more porridge! Use about 2 Tbsps. of the dough to roll individual energy balls. Finish each ball with a roll in the remaining 5 grams of walnut. Eat these for a mid-morning treat, or a snack after your yoga session!
