Our Berry Bliss energy balls are a feast for the eyes and explode with berry flavor. You can use any type of frozen berries, our favorites are strawberry and a summer berry mix of strawberries, blackberries and raspberries. The perfect warm weather treat.
Recipe (makes about 20 depending on size):
500g frozen berries (defrosted, any berry works but strawberries, raspberries, blackberries and cherries, or a berry mix, are our favorites)
20g chia seeds
50g honey (or maple, date or rice syrup)
Chocolate (if you dare/have on hand)
Method: Defrost your berries. Using frozen berries will not work (tried and failed many times!). Blitz your defrosted berries in a food processor or a bullet blender under you have a nearly smooth berry liquid. In a large bowl, mix blitzed berries with the remaining ingredients. The dough will be wet but should stay together when rolled into balls. If it is too wet, let the dough sit in the refrigerator for 30 minutes to allow the oats to absorb more liquid. If the dough is still very soft after 30 minutes, add more oats and/or chia seeds. Shape into balls, using about 1 tbsp. of dough for each (but it's not an exact science, any size works!). Freeze the balls for at least an hour, or up to 1 month. Eat frozen or let them sit out for 5 minutes before indulging.
