The raisins in these bites are super sweet and gooey, while the cardamon provides that exotic spice that warms the palette and surprises you. Part of our LUVI Pop Up Earth Day Energy Ball Workshop, these are a fan favorites, and whip up in no time. Either as bites or balls, they provide the perfect on-the-go snack.
Recipe (makes about 20 depending on size):
1 cup raisons (you could also use dates but raisins are more readily available at a comfortable price point)
1 cup oats
1 tbps. cinnamon
1 tsp. cardamom (more if you like!)
Method: Boil water in the kettle. In a large bowl, cover the raisins with boiled water and soak for 5 minutes. In the meantime, mix the oats, cinnamon and cardamom together in a large bowl. Drain the raisins and then add to a food processor and process into a fine paste. A bullet blender device will work but you may have to add some water to make the raisins blend, in which case just compensate by adding a bit of extra oats so the end product is not too runny! Mix the raisins with the dry ingredients. Form into balls and eat immediately or pop into the freezer to stay for approximately 1 month. Alternatively, line a pan with sides (I use a rectangular baking pan) with parchment paper and press the mixture into the pan to form an event layer about 1/2 inch thick. Freeze for 1 hour to set, then remove from the freezer to cut into bite size squares. Eat the squares straight away or pop back into the freezer to stay for approximately 1 month.
